Black Sapote Brownie
Did you know that nature provides a fruit that tastes like chocolate pudding?
I love this fruit in its natural state, but just recently I turned it into a brownie!
INGREDIENTS
1 cup of coconut oil
1 cup of coconut sugar
1 1/2 cup cocoa powder
1 tsp salt
1 tsp baking powder
6 tablespoons of psyllium husk, soaked in 2 1/2 cups of water
2 very ripe black Sapote fruit, discard skin and seeds
2 tsp vanilla bean paste
2 cup flour, I chose buckwheat flour
1/2 cup chocolate chips, optional ( It taste perfect without the choc chips)
INSTRUCTIONS
Preheat the oven to 180 degrees. Line an 8x8 pan with two sheets of parchment.
Melt the coconut oil and pour into the bowl.
Stir in the coconut sugar, cocoa powder, salt, and baking powder.
Add psyllium husk mixture, black sapote, and vanilla and beat well.
Stir in the flour, then gently fold in the chocolate chips.
Pour into the pan and smooth the top with a spatula. Bake about 45 minutes, or until cooked through.
Allow to cool and enjoy!
